This is one of the latest designs by Tojiro, the handle is inspired by the Japanese word Gai, which is roughly translated from the Japanese word for armour. Made from Linen mikarta which is durable, corrosion resistance, and strong against degradation over time. The convex edge of the Gai series cuts effortlessly into food and holds a very good edge.

This is a multi-purpose knife designed to perform well at a number of tasks as opposed to specializing in any one purpose.

The Gyuto, an all round knife which can be used for various tasks, is the Japanese version of a chef’s knife. Gyuto’s generally have a flatter blade profile near the heel to aid in chopping, a rounder belly for rock chopping and a sharp, pointed tip for precision cutting.
